About Word & Flour

My Story

Hi I’m Fiorella!

There is something so special about a fresh baked loaf of sourdough bread . Word and Flour Sourdough is a micro bakery born from the love of  sourdough crafting and the desire of sharing the good news of the Gospel one loaf at a time.  Here every batch is handcrafted with love, from starter to crust, using only clean and  premium quality ingredients sourced  from local markets and small entrepreneurs. Everything comes together to create naturally leavened sourdough breads and pastries that are nourishing as well as artful.
I am honored to bake for you and it is my heart’s desire  that you enjoy your purchase and that you share the fruits of this small business with others. Thank you for stopping by and supporting your local baker.

What’s the big deal with Sourdough?

Sourdough is a time-honored bread made through natural fermentation, giving it a rich flavor, a signature tang, and a wonderfully chewy texture. Because it’s crafted with a live culture of wild yeast and beneficial bacteria, sourdough is often easier to digest than breads made with commercial yeast. The long fermentation process can help break down gluten, increase nutrient availability, and create a loaf with a lower glycemic impact. Whether enjoyed warm with butter or used as the foundation for your favorite sandwich, sourdough offers a wholesome, flavorful, and naturally crafted experience you can feel good about.

Nutritional Health Benefits

Improved Digestion

Sourdough undergoes a natural fermentation process that helps break down gluten and other compounds that make it easier to digest compared to traditional bread.

Better Blood Sugar Management

The fermentation process in sourdough produces organic acids which slow down the absorption of starches in the digestive tract. This results in a lower glycemic index, meaning that sourdough bread causes a more gradual increase in blood sugar levels compared to other types of bread.

Enhanced Nutrient Absorption

Sourdough is rich in vitamins and minerals, including folate, potassium, and magnesium. The lactic acid bacteria present in sourdough help to increase the bioavailability of these nutrients, making them easier for the body to absorb.

Gut Health Benefits

The fermentation process of sourdough bread increases the presence of prebiotics, which feed healthy gut bacteria. This can support gut health and improve overall digestive function.

Potential for Healthy Aging

Research suggests that fermented foods like sourdough may contribute to healthy aging. The antioxidants and other beneficial compounds produced during fermentation can help reduce the risk of chronic diseases, such as heart disease and diabetes, and may even support bone health.

Incorporating sourdough bread into your diet can provide these health benefits while also offering a delicious and tangy flavor that enhances various meals. Whether you buy it from a bakery or make it at home, sourdough can be a nutritious addition to your diet.
